Easy Recipes: Crazy Good Caprese Sandwich
A Caprese sandwich is just the thing to help get you out of your winter slump and ready for spring. The combination of fresh tomatoes, mozzarella, balsamic glaze, and pesto between two pieces of ciabatta bread creates a sandwich that is sure to brighten your day (but fair warning, it may just become one of your newest cravings).
The ingredients you will need for this delicious Caprese sandwich are:
Ciabatta bread: Or any bread of your choice, this is just my fave. Thick and firm loaves like ciabatta, sourdough, or French work best for this recipe.
Tomatoes: Roma or larger works best for this sandwich.
Mozzarella: Pre-cut mozzarella works perfectly for this recipe and eliminates the hassle of having to grab that knife.
Balsamic Glaze: This will be drizzled inside the sandwich to add the perfect amount of sweetness.
Pesto: Store-bought works great for a quick meal, but if you are up for the challenge, making your own takes this sandwich to the next level.
Prep: Cut the ciabatta bun in half and slice your tomato and mozzarella to about ¼ of an inch thick.
To begin: add pesto to both sides of the bread (I usually add a spoonful to each side, but feel free to adjust it to your liking).
Assembling the sandwich: Place your mozzarella neatly on the bottom, add the tomatoes on top, and drizzle with balsamic glaze. Put the two sides together and dig in!
Some variations:
Add arugula or spinach for some extra flavor or to get some veggies in!
Put the sandwich in a panini press or toaster oven to warm it up, melt all the flavors together, and get that perfect cheese pull.
Add turkey, chicken, or prosciutto for a heartier sandwich with added protein.
